How to make Vegan Coffee Cake
There's nothing wrong with a little indulgence once in a while but while it's healthy to be kind to ourselves it's also possible to be kind to the planet and its other living inhabitants too. It can sometimes be a difficult decision to trade taste for responsibility but thanks to our friend Ruth Eve and another of her fantastic recipes you don't have to. Sustainability advocate and baking master Ruth has produced the goods once again with this delicious coffee cake (which just happens to be vegan).
It looks like the weather is perfect for staying indoors this weekend so why not treat yourself, your friends or your family by having a go at the recipe posted below.
Ingredients:
- For the Coffee Cake:
- 250g (2 cups) all purpose flour
- 200g (1 cup) brown sugar
- 1 tsp baking soda / bicarbonate of soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 240ml (1 cup) oat milk
- 2 tsp vanilla extract
- 80ml (1/2 cup) sunflower oil
- 1 tbsp apple cider vinegar
- 1 flax egg (1 tbsp milled flax seeds with 3 tbsp hot water)
- 4 tbsp ground coffee

For the frosting:
- 80g vegan butter
- 250g icing sugar
- 1 shot (approx. 30ml) coffee
Instructions:
- Preheat the oven to 180 degrees
- Sift the flour into a mixing bowl and add the sugar, baking soda, salt and cinnamon
- Prepare your flax egg (a common egg substitute in vegan baking!) by mixing 1 tbsp milled/ground flax seeds with 3 tbsp hot water; allow to sit for a minute until it becomes gloopy
- In a mixing jug, combine the ground coffee with the oat milk, vanilla extract, oil, apple cider vinegar and flax egg
- Mix to combine until smooth
- Grease a tin with vegan butter and pour in the mixture
- Bake for 20 minutes or until a knife comes out clean
- Place the cake onto a cooling rack and leave to cool completely before frosting
- Prepare the frosting by adding the vegan butter, powdered sugar and coffee into a mixing bowl
- Using an electric whisk, start mixing at a low speed and gradually increase until the ingredients are combined and the icing is thick and smooth
- Frost the cake when cooled and top with walnuts and dark chocolate shavings (optional)
