ROGER CHILCON, PERU

  • Region: San Jose de Lourdes, Northern Peru
  • Varietal: Caturra
  • Process: Washed

The Chilcon family owns coffee farms spanning 3 hectares in the village of El Diamante, within the San Jose de Lourdes district in Peru.

While each member of the Chilcon family owns their individual plots, Roger Chilcon oversees the collective coffee operations from harvesting to processing and drying. Pickers harvest the coffee cherries when perfectly ripe.

Roger dries the coffee slowly on raised beds inside a ventilated greenhouse until it reaches an ideal moisture content below 11%. At this point, he brings the parchment coffee to the Falcon Coffees Peru warehouse in Jaén city.

The result is a delicious washed Peruvian coffee with rich flavour notes of red plum, nougat, peach, milk chocolate and a long citrus aftertaste.

While the Falcon Specialty team was in the Jaen warehouse this year, Roger spent many days cupping with us. We were extremely impressed with how in sync he was - picking up on subtle nuances that few producers would notice without the chance to regularly sample their coffees. A true pioneer.
