How to: Easy Fluffy Pancakes

Follow this easy recipe for the best fluffy pancakes on Pancake Day!

It's no secret that our first love is coffee. But a close second is definitely delicious food to compliment said coffee. There are many contenders when it comes to possible pairings with freshly brewed coffee but one of the unanimous favourites down at the roastery has to be pancakes. This is our tried-and-tested recipe. Try it yourself this Pancake Day and you'll see what we're on about. 

So gather what's left in your fridge and cupboards (you probably have most of the ingredients) and get cooking.

Ingredients: 

  • 100g Greek yogurt
  • 2 eggs
  • 50ml vegetable oil
  • 70ml milk
  • 1 pinch of salt
  • 1 teaspoon vanilla extract
  • 1 pinch of sugar
  • 180g self-rising flour
  • 1 teaspoon baking powder 
  • 1 tablespoon butter

 

Instructions: 

Mix all of the dry ingredients together in a big bowl. Melt the butter and pour into the mixture making sure it is not piping hot, so it won't cook the eggs (they're going in next). 

Add the yogurt, eggs, milk and oil and mix everything together using a whisk. 

Whisk until the batter is smooth and there are no visible lumps. 

In a non-stick pan heat a small knob of butter until melted and then place one tablespoon of the batter in the centre of the pan. Cook on medium heat for 1 minute and then once bubbles have appeared on the surface of the pancake, flip it over with a spatula and keep cooking for another minute.

Serve with maple syrup, chocolate spread, fruits and berries or any other toppings. Pair with a freshly brewed filter or espresso brewed coffee. Our personal favourite is The Mount Blend with a touch of oat or cows milk.
